4th Gen Farming

Most fish farming starts with catching baby fish. It is like you go out wild field and harvest seeds and grow it in your back yard. In sustainability point of view, farming fish contributes a little. But it changes when you grow your plants in your backyard with seeds harvested from plants in your backyard. This type of fish farming is called 4th generation farming. Yama has been supplying fish farmed in this way. If your customers are concerned with over fishing and sustainability, this is the fish you should buy.

Pioneer of 4th generation farming is Kinki University or Kindai in Japanese abbreveation. Our fish bears name of KINDAI meaning it is 4th generation farmed fish.

普通、魚の養殖というと、例えばハマチですとモジャコと呼ばれる幼魚を捕獲してきて成魚まで育ててることを意味します。 幼魚とは言え、天然魚を捕獲してくるわけで、資源保護の観点からすると、養殖が乱獲を防止するのにそれほど貢献しているとは言えません。 しかし完全養殖となると話は別です。なぜならばふ化させる卵は養殖魚だからです。

完全養殖は近畿大学が研究を始め世に広めたものですが、Yama Seafoodは、完全養殖魚を最初から販売しています。もしお客様の中に資源保護とか、乱獲について関心の深い方がいましたら、完全養殖魚はそういう心配が全くない魚としてお勧めすることができます。

Kanpachi could be said as “less fatty Hamachi” in one word. Its meat is firmer. Otherwise, it is very similar to Hamachi.

ハマチに似た味を持っていますが、ハマチに比べ脂肪分が少なく、身質もしまっていて歯ごたえがあります。

Aji (Japanese horse-mackerel/Japanese jack mackerel) is known as popular inexpensive fish. Although Shima Aji (White Trevally) shares name Aji, it is not inexpensive. As a matter of fact, it is very expensive and tastes matches with it.

アジは手ごろな値段で一般的な魚ですが、同じ名前があるからと言って、シマアジもそうとは限りません。 事実高級魚のひとつで、それに見合うおいしさをもった魚です。

It looks like Karei (Flounder), but Hirame (Olove flounder/Bastard hulibut) has eyes on left side body while Karei has them on right side.

Fat content is high and at same time it has firm meat.

カレイと似ていますが、ヒラメは体の左側に目があり、カレイは右側です。

身がしまっているのに、脂がのっていて、歯ごたえと脂のおいしさが同時に楽しめます。
