YAITO KATSUO (SUMA)

It belongs to tuna group.  It is comparatively small but it is said that all of its meat is Toro.  Farming is being tried but not yet widely successful.

HIRA SUZUKI

Hira Suzuki (Blackfin seabass) is different from Suzuki (Japanese seabass).  It tastes more like Isaki or Madai.  Not fishy and meat color is more vivid.

JIKINME

Fatty Kinmedai (alfonsino) caught near shore by hand line is called Jikinme.  It is much tastier than regular Kinmedai and it is rather rare which makes this fish expensive.
